  • Starbucks now has over 7,000 outlets worldwide and its corporate personality might be wearing thin. But what it did is undeniable -- it took us beyond the cheap ordinary drip  coffee. And today, while coffee bars abound, you still have to search for ones that serve high-quality, well-made coffee in a pleasant setting.

    According to the Organic Trade Association's (OTA's) 2007 Organic Manufacturer Survey, the business association for the North American organic industry U.S. retail sales of organic coffee in 2006 increased 24% to $110.36 million, with some estimated indicating that actual sales could be even higher.

    The parameters of quality coffee unfortunately remain ill-defined. To answer the more obvious questions about quality, you may want to consider the following:

    The really good coffee is becoming harder and harder to find and to purchase. The good stuff comes from remote, high altitude volcanic rainforests. Access is difficult. Lower down in the valley, clear fields, mechanized farming, insecticides and fertilizers even genetic modification yield far greater production and thus profit. The more the indigenous farmers of these remote high mountain family hectors are marginalized the less attentive they are to their coffee production.

What is organic coffee?
Organic coffee is grown using methods and materials that have a low impact on the environment. Organic production systems replenish and maintain soil fertility, reduce the use of toxic and persistent pesticides and fertilizers, and build biologically diverse agriculture. Third-party certification organizations verify that organic farmers abide by the law.

How is organic coffee decaffeinated?
Most conventionally produced coffees are decaffeinated by using toxic solvents such as methylene chloride (probable human carcinogen, harmful to central nervous system7) or ethyl acetate (harmful to central nervous system, kidneys and liver8). Organic coffee, however, must be decaffeinated using a certified organic decaffeination process to maintain the organic integrity of the beans. One of the most popular organic decaffeination processes is the SWISS WATER® process, using only water to remove caffeine.

coffee Storage:

Coffee is like really good bread: no matter how you store it, it never tastes as good as it does when it's fresh. Whole bean coffee tastes best within the first week after it's roasted. If it's ground, coffee goes stale even faster. We recommend you use ground coffee within a few days, at most.
